Baked Chicken Breasts with Beans and Sausage
A combination of tender chicken breasts, buttery beans, refreshing tomatoes, and spicy sausage will completely delight you. The dish is varied and filling enough that it doesnt require any special side dishes. A large bowl of seasonal salad and, of course, some bread will suffice, as youll happily wipe your plates clean to the last drop.

Ingredients

2 spoons Oil, olive

120 g Sausage, chorizo

1 piece Onion, raw

2 pod Garlic, fresh

400 g Tomato, pieces - can

1 dl Soup base, beef, cube

400 g Beans, grains, cooked

1 piece Meat, chicken, breasts

0.25 teaspoons Salt, table

2 pinch Spices, pepper, black

pieces Parsley, fresh
Steps

Wash the chicken breasts and thoroughly dry them with paper towels. Cut them in half to get two halves, which we season well with pepper and salt. Drain the beans from the can, rinse them under running water, and drain well. Peel the onion and garlic and chop them separately. Slice the sausage into rings.

Preheat the oven to 180 degrees Celsius. Heat olive oil in a pan and fry the sausage rings until crispy. Remove the fried rings from the pan and set them aside on a plate. In the hot fat, sear the seasoned chicken breast halves. Cook them for 2 minutes on each side. Set the seared chicken breasts aside on a plate.

Add the chopped onion to the pan and sauté it, stirring occasionally, until translucent. Add the garlic and sauté it together with the onion for 1 minute. Pour in the diced tomatoes and broth, and mix everything well. Season with pepper and salt.

Remove the pan from the heat and stir in the beans, half of the chopped parsley, and the fried sausage rings. Transfer the contents of the pan to a deep baking dish. Add the seared chicken breasts, then place the dish in the preheated oven for 25 minutes. Sprinkle the prepared dish with chopped parsley.
