Baked Chicken Tortillas
Delicious tortillas with a quickly prepared filling made from chicken, vegetables, sour cream, and cheese. You can use wheat or corn tortillas and serve the dish with a bowl of salad if desired.

Ingredients

500 g Meat, chicken, breasts

pieces Oil, vegetable oil, canola

1 piece Onion, raw

2 piece Bell pepper, red, fresh

100 g Beans, fresh

100 g Corn, yellow, fresh

200 g Tomato, pieces - can

200 g Sour cream

4 pieces Tortilla, wheat

50 g Cheese, Cheddar

150 g Cheese, mozzarella
Steps

Cut the chicken fillets into strips. Peel and chop the onion, and dice the peppers into smaller cubes.

Heat oil in a pan and sauté the chicken strips for three minutes. Once the meat changes color, transfer it to a plate.

Use the same pan for sautéing the vegetables. Add a bit more oil if needed, then sauté the onion and peppers for four minutes. Add the beans, corn, and tomatoes.

Return the chicken strips to the pan and mix in half of the sour cream. Season with salt and pepper, cook for two more minutes, then remove from heat.

Preheat the oven to 220°C. Place a portion of the filling on each tortilla, sprinkle with some cheddar and mozzarella, then roll them up. Arrange them side by side in a baking dish with the folded end facing up. Secure with toothpicks.

Spread the remaining sour cream and cheese mixture over the top of the filled tortillas. Bake for 15 to 20 minutes until the cheese and sour cream are nicely browned.

Advice
The filling can also be seasoned with a mix of spices for Mexican dishes or add a bit of ground chili for a spicy flavor. Mozzarella and cheddar can be replaced with other good melting cheeses that you have on hand.
