Ingredients
-
1 piece Fish, eel, fresh
-
1 spoon Soy sauce, tamari
-
1 spoon Alcohol, Sake
-
1 spoon Oil, sesame
-
1 teaspoon Spices, paprika
-
2 teaspoons Sugar, white
-
1 piece Chili peppers, red chili, fresh
-
1 piece Onion, young
-
1 pinch Salt, table
-
1 pinch Spices, pepper, black
-
1 teaspoon Koruzni škrob
-
10 g Oil, plant, coconut
Steps
-
Wash the eel and remove the skin with a sharp knife. Cut it into 4 cm wide pieces. Wash the chili, remove the seeds, and finely chop it. Wash the young onion, clean it, and finely chop it.
-
In a pot, mix sake, soy sauce, salt, pepper, chopped chili, onion, sugar, ground chili, and sesame oil. Place the pot on the stove and bring all the ingredients to a boil. Once the liquid boils, let it cook until all the sugar dissolves. In a small bowl, add 3 tablespoons of water and dissolve a teaspoon of starch in it. Then mix the starch mixture into the pot and quickly cook it (no more than 2 minutes!). Remove the pot from the heat and let the marinade cool slightly.
-
Dip the eel pieces into the marinade and let them marinate for at least 10 minutes. Pierce all the pieces with wooden skewers to prevent them from curling during baking.
-
Heat a pan and pour in coconut oil. Once the oil is hot, place the eel pieces in the pan and bake them at a moderate temperature for 15 minutes. While baking, baste them several times with the marinade and turn them to ensure they are evenly baked on all sides.
-
Remove the skewers from the baked eel pieces and serve them on plates. You can pour the remaining marinade over the eel pieces or serve it in a small bowl as a dipping sauce.
