Preheat the oven to 200 degrees Celsius. First, thoroughly wash the sweet potato and scrub it if necessary, then dry it with paper towels. Place it on a baking tray lined with baking paper and bake in the preheated oven for about 45 minutes. To check if the potato is baked, use a narrow knife to pierce the potato - if it goes through easily, the potato is baked.

Remove the baked potato from the oven and let it cool slightly. Then, cut it in half lengthwise and scoop out enough of the baked flesh from both halves to create a cavity. Carefully crack an egg into the cavity. Add half a tomato, season with salt and pepper, and bake in the preheated oven for 15 to 20 minutes. If you want the yolk to remain runny, remove the potato from the oven after 15 minutes of baking; otherwise, bake for a few more minutes or until the egg is cooked to your liking.
