Baked Eggs Florentine

Ingredients

50 g Butter, unsalted

1 piece Onion, raw

3 pods Garlic, fresh

200 ml Sweet cream

250 g Spinach, raw

100 g Cheese, Parmesan, grated

4 pieces Egg, fresh

Steps

Preheat the oven to 190 degrees Celsius. Peel and finely chop the onion and garlic. Wash and dry the spinach.

Melt the butter in a pan and sauté the onion and garlic while stirring. Pour in the cream, bring to a boil, and let the sauce simmer for 10 minutes to thicken. Add the spinach, wait for it to wilt, then stir in 2/3 of the grated Parmesan. Season the sauce with pepper and salt to taste.

Remove the pan from the heat, then carefully crack the eggs into it, lightly seasoning them with salt and pepper. Sprinkle the remaining grated Parmesan on top, then place the pan in the preheated oven for 15 minutes.

Once the eggs are baked, serve the dish immediately. Offer sliced bread on the side.
