Baked Eggs in Spiced Sauce with Beans

Steps

Peel the onion and garlic, then finely chop them separately. Clean the carrot (peel or scrape with a knife if necessary), wash it, and cut it into small pieces. Rinse the beans under running water.

Place a pan that can go into the oven on the stove and heat the oil in it. First, sauté the onion and carrot in the fat. Once the vegetables soften slightly, add the garlic and chili flakes, and continue to fry everything together over medium heat for another 2-3 minutes, stirring occasionally.

Add the beans, tomato, and paprika to the pan. Mix everything well, then cover the pan and let the sauce simmer over medium heat until it thickens slightly. Season with salt and pepper to taste.

Rinse the parsley under running water and dry it. Cut the stems into pieces and add them to the sauce, then roughly chop the leaves. Preheat the oven to 200 degrees Celsius.

Once the sauce has thickened appropriately, make small indentations in it with a spoon and carefully crack the eggs into them. Lightly season the eggs with salt and pepper. Bake in the preheated oven for 10 to 15 minutes. If you prefer the yolk to be runny, remove the pan from the oven after about 10 minutes of baking; otherwise, bake for a few more minutes until the eggs are cooked to your liking.

Once the eggs are baked, remove the pan from the oven. Sprinkle the chopped parsley on top and serve the dish directly in the pan it was prepared in.

Advice
If you dont have an ovenproof pan, you can prepare the sauce in a smaller pot. Once ready, transfer it to a baking dish and add the eggs. Then place the dish in the preheated oven. You can also add chopped fresh peppers to the sauce if desired.
