1 piece Sausage, chorizo

Slice the sausage into rings, then place a pan on the stove. Add a tablespoon of oil to the pan and fry the sausage rings well on both sides until they turn dark brown and become crispy. Transfer them to a bowl.

Add a little more oil to the pan and crack the eggs into it. Season the eggs with salt and pepper and wait for the egg whites to set. Sprinkle them with a bit of paprika and chopped parsley. Remove the pan from the heat, transfer the eggs to a plate, and garnish with the sausage rings.
