Ingredients

2 kg Meat, pork, smoked ham

1 piece Spices, cinnamon, ground

1 teaspoon Spices, pepper, black

8 pieces Spices, cloves, ground

200 ml Syrup, maple

2 teaspoons Mustard

2 spoons Worcestershire sauce

2 spoons Soy sauce, shoyu

Place the ham in a large pot and add enough cold water to completely cover the ham. Add a cinnamon stick, bay leaf, peppercorns, cloves, and coriander seeds. Bring the contents of the pot to a boil, then reduce the heat so the water simmers gently, cover the pot, and cook the ham for about 1 hour and 50 minutes. Add more boiling water if needed during cooking.

Drain the liquid in which the ham was cooked (it can be used for soups and stews) and let the ham cool slightly. Preheat the oven to 190 degrees Celsius. Place the ham in a deep baking dish and remove the skin. Make sure to leave an even layer of fat on the ham. Score the fat with a knife to create a beautiful diamond pattern.

In a bowl, mix together maple syrup, mustard, Worcestershire sauce, and soy sauce. Pour half of the mixture over the ham in the baking dish. Place the dish in the preheated oven for 15 minutes, then remove it from the oven, pour the remaining mixture over the ham, and bake for another 35 minutes. Baste the ham several times with the juices that accumulate in the dish during baking.

Transfer the baked ham to a cutting board. Let it rest for 15 minutes, then slice it into desired thickness, serve on a plate or platter, and enjoy.
