Baked Gnocchi in Tomato Sauce with Mascarpone

450 g Potatoes, white

2 spoons Oil, olive

1 piece Onion, raw

pieces Garlic, fresh

1 spoon Tomato, concentrate

420 g Tomato sauce, without salt

1 spoon Vinegar, balsamic

1 teaspoon Spices, basil, dried

220 g Cheese, mozzarella

1 handful Cheese, Parmesan, grated
Steps

Preheat the oven to 200 degrees Celsius. Grease a deep baking dish with oil and set it aside.

Peel the garlic and onion, then finely chop them separately. Heat oil in a large, deep pan and sauté the chopped onion until translucent. Add the garlic and cook together with the onion for 1 minute until fragrant, then stir in the tomato paste and cook for another 30 seconds, stirring constantly.

Pour the strained tomatoes into the pan. Mix well and let the sauce come to a boil. Reduce the heat to medium and cook the sauce for about 10 minutes, stirring occasionally, until it thickens. Season with salt, Italian herbs, and add a splash of balsamic vinegar.

While the sauce is cooking, bring a large pot of salted water to a boil. Add the gnocchi and cook according to the manufacturer's instructions.

Roughly chop about 3/4 of the basil leaves. Remove the prepared sauce from the heat and stir in the mascarpone, chopped basil, and cooked gnocchi.

Transfer half of the gnocchi mixture into the greased baking dish and spread half of the mozzarella, torn into smaller pieces, over it. Add the remaining gnocchi and top with the rest of the torn mozzarella. If desired, grate some Parmesan cheese on top. Place the dish in the preheated oven for 12 minutes, until the cheese melts and turns golden.

Garnish the prepared dish with basil leaves and serve while still warm.
