Baked Gnocchi with Chicken, Mushrooms, and Cream
The preparation is quick and quite simple, and the dish is so good that youll likely lick your plates clean. Since the dish contains mushrooms, it is more suitable for lunch, but if mushrooms dont cause you digestive issues, you can also prepare and serve it for dinner. Pair it with a bowl of salad to refresh the meal and provide an extra dose of vitamins and minerals.

600 g Potatoes, white

3 spoons Oil, plant, sunflower

500 g Meat, chicken, breasts

2 spoons Butter, unsalted

250 g Mushrooms, mushrooms, fresh

2 pod Garlic, fresh

150 ml Soup base, chicken, cube

300 ml Sweet cream

120 g Cheese, edamame

1 handful Parsley, fresh
Steps

Place a pot of salted water on the stove. Once it boils, add the gnocchi and cook for 2-3 minutes. Drain the gnocchi, rinse with cold water, and set aside.

While the gnocchi is cooking, clean the mushrooms with a damp cloth (you can also quickly rinse them under running water and dry them). Slice them. Cut the chicken breast into pieces or strips. Peel and finely chop the garlic.

Place a larger heat-resistant pan on the stove and heat 2 tablespoons of oil. Add the chopped chicken and cook for 4-5 minutes, stirring occasionally, until nicely browned. Season with salt, ground pepper, basil, and thyme. Remove the cooked chicken from the pan and keep it warm on a plate.

Pour the remaining tablespoon of oil into the pan and add butter. Add the mushrooms and garlic and cook for 1-2 minutes until the mushrooms soften and change color.

Add the gnocchi and chicken to the pan, then pour in the broth and cream. Stir and cook until the sauce boils. Adjust seasoning with salt and/or ground pepper if needed.

Remove the pan from the heat and sprinkle grated cheese over the gnocchi. Place the pan in the oven, preheated to 180-200°C (350-400°F), for 10-15 minutes until the cheese melts and slightly browns.

Before serving, sprinkle some chopped parsley over the dish if desired.
