Baked Lemon Pudding
You will be absolutely delighted with this refreshing and light lemon dessert. While baking, it separates into two parts: a light and fluffy top layer resembling a soufflé and a wonderfully creamy, pudding-like sauce beneath it. The dessert is best when still warm, and it can also be served at the end of a festive meal.

Ingredients

50 g Butter, unsalted

200 g Sugar, white

3 pieces Egg, fresh

1 spoon Lemon zest, fresh

130 g Wheat flour, white, multi-purpose

240 ml Milk, whole milk

160 ml Juice, lemon

Preheat the oven to 180 degrees Celsius. Place the oven rack in the middle position. Grease 4 to 6 small round molds and place them in a deep baking dish.

In a bowl with an electric mixer, cream the softened butter and sugar until smooth. Crack the eggs and separate them into two bowls. Gradually add the egg yolks, one at a time, to the butter mixture while continuously mixing. Once all the yolks are added and the mixture is a light yellow color, mix in the lemon zest and sifted flour. Pour in the milk and lemon juice and mix well until you get a uniform mixture.

Beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the beaten egg whites into the lemon mixture in two or three additions using a hand whisk. It is important that there are no large chunks of egg whites in the mixture. Fill the greased molds almost to the top with the prepared mixture.

Place the baking dish with the molds in the oven and pour in enough hot water to reach halfway up the molds. Bake the pudding in the preheated oven for 30 to 40 minutes, until the top is nicely golden brown and springy to the touch.

Carefully remove the molds with the hot lemon pudding from the baking dish. Wait a few minutes, then dust the top with a little powdered sugar and serve the dessert while still warm.

Advice
