Baked Liver Dumplings in Broth
Liver dumplings will be perfect for a good homemade broth. Their flavor will complement and nicely enhance especially beef broth.

200 g Meat, veal, liver

1 piece Onion, raw

3 pieces Bread, wheat

4 dl Milk, skimmed

3 spoons Oil, plant, sunflower

1 piece Egg, fresh

1 piece Egg, egg yolk, fresh

2 pinch Salt, table

1 pinch Spices, pepper, black

1 pinch Spices, mayonnaise, dried

1 l Soup base, beef, cube

10 twig Thyme, raw

10 g Butter, unsalted
Steps

Peel the onion, wash it, and finely chop it. Cut the bread rolls into smaller cubes and soak them in milk. Let them sit for a few minutes and then squeeze them well.

Heat oil in a pan and add the onion. Fry it while stirring until it turns golden brown. Let the fried onion cool. In a bowl, mix the liver, fried onion, bread rolls, egg, yolk, salt, pepper, and marjoram. With wet hands, shape the mixture into 4 larger dumplings.

Preheat the oven to 200°C. Grease a baking dish and place the dumplings in it. Put the dish in the preheated oven and bake the dumplings for 10 minutes. Meanwhile, heat the beef broth in a pot. Place the warm dumplings in bowls and pour the beef broth over them. Wash the parsley, finely chop it, and sprinkle it over the broth and dumplings.
