Baked Millet Porridge with Apples and Cottage Cheese
A delicious breakfast made from millet porridge, eggs, apples, and cottage cheese will fill your kitchen with an intoxicating aroma. Since the porridge does not contain gluten and no flour is used in the recipe, this dessert is also suitable for people with gluten sensitivity. The dish is best when still slightly warm, served with a cup of your favorite hot beverage.

Steps

Place the millet porridge in a fine sieve and rinse it thoroughly with hot water. Then transfer the porridge to a pot and cover it with cold water. Add salt, a cinnamon stick, and lemon zest. Cook the porridge over moderate heat until it boils, then reduce the temperature and simmer for about 10-15 minutes, stirring occasionally, until it softens. Add more liquid if needed.

Once the porridge is cooked, remove the pot from the heat and discard the cinnamon stick and lemon zest. Let the porridge cool until lukewarm.

Separate the egg whites and yolks into two bowls. Add regular and vanilla sugar to the yolks and mix for about 5 minutes until you get a light, pale yellow cream. Then mix in the cottage cheese, sour cream, and lemon juice.

Add lemon zest, the cooled cooked porridge, and coarsely grated apples to the yolk mixture. Beat the egg whites into stiff peaks and gently fold them into the mixture in two or three parts using a spatula.

Generously grease a deep baking dish with butter, then pour in the prepared mixture and spread it evenly across the surface, smoothing the top. Bake the dish for 30-40 minutes in an oven preheated to 180°C (356°F). The top should turn golden brown.

The dish is good warm or cold. Before serving, dust it with powdered sugar and cut it into pieces. Serve on plates and optionally add a dollop of whipped cream.
