Baked Mushrooms with Potatoes
Why not! Bake them in a fireproof dish, and serve with homemade mayonnaise dressing. Nothing beats homemade!

Ingredients

250 g Mushrooms, mushrooms, fresh

1 kg Potatoes, white

5 spoon Oil, olive

0.5 teaspoons Salt, table

3 pinch Spices, basil, dried

1 piece Tomato, red

80 ml Oil, olive

1 teaspoon Juice, lime

1 spoon Yogurt, plain, from whole milk

Thoroughly wash young potatoes and cut them into larger pieces. Also, thoroughly wash the mushrooms, clean them well, and dry them with paper towels. Cut the mushrooms in half. Thoroughly wash the tomato, remove the stems and green parts, then cut it into eighths.

Crack an egg and separate the yolk from the white. Save the white for another dish, and mix the yolk with a pinch of salt using a hand mixer. Gradually add oil, first drop by drop, then in a very thin stream. Keep mixing constantly to create a creamy mayonnaise, which we season with lemon juice. Add yogurt and mix all the ingredients well.

Preheat the oven to 180 °C. Prepare a larger baking dish and drizzle it with oil. Add the potatoes and mushrooms, season with spices, then place it in the preheated oven for 20 minutes.

Serve the prepared dish on plates, garnish with tomato, and drizzle with the mayonnaise dressing.
