Baked Oats with Coconut, Cranberries, and Chocolate
Oats have recently become a popular ingredient in every kitchen. They can be used to make a delicious porridge, either cooked or baked, added to soups or meatball mixtures, and they also work wonderfully in cookies and baked goods. This time, we present you with a recipe for a healthy, tasty, and quickly prepared baked good that includes oats, coconut, cranberries, and dark chocolate. White flour and sugar are replaced with brown sugar and whole wheat flour. It pairs excellently with coffee, tea, or a glass of freshly squeezed orange juice.

160 g Oat bran, raw

300 ml Yogurt, plain, from whole milk

100 g Flour, Whole wheat

100 g Sugar, brown

40 g Coconut, flakes

In a large bowl, first mix the oats and yogurt. It is important to mix well so that the oats are evenly moistened. Let it sit for 30 minutes to allow the oats to absorb the liquid and soften.

Meanwhile, in another bowl, mix all the dry ingredients: coconut and whole wheat flour, brown sugar, salt, and baking powder. Lightly grease a small rectangular or square baking dish (approximately 20 x 30 cm or 20 x 20 cm) with butter and line it with baking paper. Chop the chocolate into pieces.

Preheat the oven to 180 degrees Celsius. Add the eggs, oil, and vanilla extract to the bowl with the soaked oats. Mix well to form a uniform mixture, then first stir in the dry ingredients, followed by the cranberries and chocolate.

Pour the prepared mixture into the baking dish. Use a spatula to spread it evenly across the surface and smooth the top. Bake in the preheated oven for about 30 minutes. For the last 5-10 minutes of baking, you can increase the temperature to 200 degrees Celsius to allow the top to turn a nice golden brown.

Once baked, let the baked oats cool in the dish. Once cooled, cut into pieces and serve immediately or store in an airtight plastic container to prevent it from drying out.
