Baked Octopus
Baked octopus is a traditional Croatian dish, but it is also very popular in Slovenia, especially in the coastal region. If you dont want to travel to the coast just for octopus, you can prepare it at home.

Ingredients

4 pieces Octopus, fresh

4 pods Garlic, fresh

2 piece Onion, raw

1 bouquet Parsley, fresh

2 piece Spices, bay (leaves)

1.5 dl Oil, olive

1 twig Rosemary, fresh

2 pinch Salt, table

2 pinch Spices, pepper, black

1 handful Olives, green, in brine

1 piece Lemon, fresh, without shell
Steps

Thoroughly wash and dry the octopus. Pound the tentacles with a meat mallet to make them tender. Peel, wash, and chop the onion. Wash the bay leaves. Wash the rosemary, pluck the leaves, and finely chop them. Peel the garlic, crush it with a knife, and chop it.

Preheat the oven to 200°C. Grease a fireproof dish with olive oil and place the octopus in it. Sprinkle with chopped garlic, rosemary, onion, and season with pepper and salt. Add the bay leaves to the dish, drizzle the octopus with a little olive oil, and cover the dish.

Place the dish in the preheated oven and bake the octopus for 50 minutes. Then remove the cover and bake for an additional 10 minutes. Take the dish out of the oven and arrange the octopus on plates. Drizzle each octopus with the cooking juices from the dish.

Wash and pluck the parsley. Finely chop it and sprinkle it over the octopus. Add a few green olives to each octopus. Wash the lemon. Slice it into wedges and use them as garnish. A great side dish for octopus is baked potatoes or Swiss chard with potatoes.

Advice
After baking, you can remove the skin from the octopus tentacles if desired. However, they are much better if you leave the skin on, as they become crispier.
