Baked Pancakes with Hazelnut Filling

Ingredients

40 g Butter, unsalted

40 g Wheat flour, white, multi-purpose

250 ml Milk, whole milk

80 g Nuts, hazelnuts

70 g Powdered sugar

Steps

In a pot with a thick bottom, melt the butter and lightly toast the flour in it, stirring constantly until golden brown. Slowly pour in the milk while continuously whisking with a whisk. Bring the mixture to a boil, then reduce the heat and cook the sauce for another 5 minutes to thicken, stirring thoroughly, especially along the bottom and sides of the pot. Remove the pot from the heat and let the béchamel cool.

Spread the hazelnuts in a single layer on a baking sheet and place it in the oven preheated to 180°C for 10 minutes. Halfway through baking, shake the baking sheet well to ensure the hazelnuts roast evenly. Transfer the roasted hazelnuts to one half of a clean kitchen towel. Cover them with the other half of the towel and gently roll them with your hands to remove the brown skins. Grind or chop the roasted hazelnuts.

Transfer the cooled béchamel to a bowl and mix it with sugar and egg yolks. Add the chopped/ground hazelnuts and the beaten egg whites.

Reduce the oven temperature to 170°C. Spread the prepared filling onto the pancakes and roll them up. Cut the rolls into 5 cm pieces. Arrange them in a greased baking dish and dot the top with pieces of butter. Place the dish in the preheated oven for 20 minutes.

Serve the baked pancakes on plates, dust with powdered sugar, and serve while still warm. Offer compote or apple sauce on the side.
