Baked Pasta with Mushrooms and Ham
An idea for a budget-friendly meal that can be served for lunch or dinner. You wont spend more than 10 euros on ingredients, and the prepared dish will feed five to six people. To make the meal easier to digest, serve it with a large bowl of salad.

500 g Pasta, Macaroni

25 g Butter, unsalted

200 g Mushrooms, mushrooms, fresh

3 pieces Onion, young

1 spoon Wheat flour, white, multi-purpose

500 ml Milk, whole milk

150 g Meat, pork, smoked ham

150 g Cheese, edamame

1 handful Parsley, fresh

Clean the mushrooms with a damp cloth or quickly rinse them under running water and dry them well. Clean and wash the spring onions. Slice the green part into rings and finely chop the white part. Cut the ham into pieces.

Preheat the oven to 200 degrees Celsius. Place a pot with a larger amount of water for cooking the pasta on the stove. Just before the water boils, add salt to increase the boiling power. Add the pasta to the boiling water and cook until it is still firm to the bite (cooked 'al dente').

While the pasta is cooking, prepare the sauce. Quickly sauté the sliced mushrooms in half of the melted butter. Once they are sautéed, lightly salt them and transfer them to a plate. Melt the remaining butter in a pan and sauté the onion. Sprinkle with flour and cook for 1-2 minutes, stirring constantly, until the flour turns light yellow. Slowly pour in the milk while continuously stirring to avoid lumps.

Once all the milk is added, bring the sauce to a boil, then simmer it slowly for 10-15 minutes to thicken. Stir occasionally, especially along the bottom and sides of the pan, to prevent burning. Mix in the chopped ham, sautéed mushrooms, and grated cheese. Stir well, season with pepper and salt to taste, and remove from heat.

Drain the cooked pasta and mix it with the prepared sauce. Transfer the mixture to a greased baking dish and bake in the preheated oven for 20 minutes. Sprinkle the finished dish with chopped parsley or watercress, and serve it directly in the baking dish.
