Baked Pasta with Pumpkin Sauce
Penne pasta baked together with a delicious sauce made from pumpkin, sun-dried tomatoes, cheese, and cottage cheese. For a crispy finish, cheese and breadcrumbs are added. A true autumn vegetarian delight.

800 g Pumpkin, raw

3 pods Garlic, fresh

100 g Tomato, dried, in oil

4 dl Milk, whole milk

200 g Cheese, edamame

400 g Pasta, Macaroni

200 g Cheese, cottage cheese

50 g Cheese, Parmesan, grated

40 g Breadcrumbs, dried

Preheat the oven to 220 degrees Celsius. Line a baking tray with parchment paper.

Peel the pumpkin, remove the seeds, and cut it into smaller pieces. Place them on the baking tray along with whole garlic cloves, drizzle with olive oil, season with salt and pepper, then mix. Bake for 20 minutes until the pumpkin pieces soften and slightly brown.

Meanwhile, cook the penne pasta in salted water until al dente. Drain the cooked pasta and drizzle with olive oil to prevent sticking.

Remove the baked pumpkin from the oven and reduce the temperature to 190 degrees Celsius. Grease a baking dish, approximately 35 x 25 centimeters in size.

Transfer the baked pumpkin to a pot. Add the roasted garlic, squeezing it out of its skin, and the sun-dried tomatoes. Blend everything together until smooth to create a creamy sauce.

Pour in the milk and heat while stirring. Season further if needed. Add three-quarters of the grated cheese to the warmed mixture. Stir until melted.

Mix the penne pasta and cottage cheese into the pumpkin sauce, then transfer everything to the baking dish. Sprinkle with the remaining grated cheese, hard grated cheese, and finally breadcrumbs.

Bake in the preheated oven for 30 minutes, then serve with a large bowl of salad.
