Baked Peppers with Tuna Filling
Baked peppers are delicious on their own, but stuffed with a tuna filling, they are even better. You can enjoy this dish for lunch or dinner, and if youre unsure what to serve it with, a large bowl of seasonal salad will certainly not disappoint.

4 pieces Bell pepper, red, fresh

3 slices Bread, wheat

160 g Fish, tuna, in oil

2 teaspoons Carp, soaked

2 pod Garlic, fresh

Preheat the oven to 180 degrees Celsius. Wash the peppers and dry them with paper towels. Cut them in half lengthwise and carefully remove the stems and seeds.

Crumble the bread into a bowl. Pour milk over it and let it sit for 10 to 15 minutes to soak and soften. Before adding it to the mixture, squeeze out the excess milk.

Peel the garlic and shallot, rinse the herbs under running water, and shake them dry. Finely chop the garlic, shallot, capers, and herbs.

Open the can of tuna and drain the excess oil. Transfer the drained tuna to a bowl. Mix it with the squeezed bread, chopped herbs, capers, shallot, and garlic. Lightly season the mixture with pepper and salt. Finally, add just enough olive oil to bind the ingredients together.

Line a low baking dish with parchment paper. Arrange the cleaned pepper halves in the dish and fill them with the prepared filling. In a small bowl, mix the grated cheese, breadcrumbs, and pine nuts. Sprinkle this mixture over the filling, drizzle with a little olive oil, and bake in the preheated oven for 25 to 30 minutes.

Serve the baked peppers on plates and accompany them with a large bowl of seasonal salad.
