Steps

Preheat the oven to 200 degrees Celsius. Cut off the core and leaves of the pineapple. Place it on the cut end of the core and hold it firmly with one hand. With the other hand, using a long knife, cut the scaly skin from top to bottom in strips. Peel the fruit as thickly as possible to remove all the "eyes." Peeled pineapple is cut into quarters, and the hard core is removed.

Cut the pineapple into small pieces, place them in a bowl, pour over lime juice, and sprinkle with lime zest and sugar. Mix well, transfer to a deep baking dish lined with baking paper, and bake in the preheated oven for 20 minutes. Shake the baking dish several times during baking to prevent the pineapple pieces from burning.

While the pineapple is baking, prepare the lime-rum syrup. In a small saucepan, slowly bring to a boil a mixture of water, sugar, lime zest, and vanilla seeds over medium heat. Once the syrup boils, cook it for another 5 minutes, then remove the saucepan from the heat and let the syrup cool. Stir in the rum into the cooled syrup.

When serving the dessert, first place 2 to 3 small scoops of ice cream in a bowl. Add the baked pineapple pieces and pour the syrup over everything. Serve the prepared dessert immediately.
