Baked Plums with Goat Cheese

Preheat the oven to 180 degrees Celsius. Wash the plums and drain them. Then halve them and remove the pits. Place the plum halves in a small deep baking dish (with the cut side facing up). Drizzle the plums with one tablespoon of honey and bake in the preheated oven for about 20 minutes.

While the plums are baking, prepare the goat cheese filling. Dry roast the pine nuts in a pan. Shake the pan several times during roasting to ensure the pine nuts are evenly toasted. Finely chop the toasted pine nuts. In a bowl, mix the goat cheese, chopped pine nuts, and half a tablespoon of honey.

After 20 minutes of baking, remove the baking dish from the oven and stuff the plums with the prepared filling. Increase the oven temperature to 200 degrees Celsius and bake the dish for another 5 minutes.

Serve the baked stuffed plums on a plate or platter, drizzle with the juice that has collected in the baking dish, and enjoy.
