Baked Polenta with Tomato Sauce and Mozzarella
An excellent recipe that wont require much effort or long cooking time. You only need to cook the polenta, and the oven will do the rest of the work. This dish is a great idea for a light meatless lunch (or dinner) that you can enjoy with a bowl of salad, or you can serve it as a side dish to meat, fish, or seafood dishes.

Ingredients

2 cups Milk, whole milk

2 cups Soup base, chicken, cube

40 g Butter, unsalted

pieces Polenta

pieces Tomato sauce, without salt

250 g Cheese, mozzarella

Place a pot with broth and milk on the stove. Season the liquid with ground pepper and any dry herbs you like (thyme, rosemary, basil, etc.). Add a piece of butter for flavor.

Once the liquid comes to a boil, reduce the heat to medium and slowly pour in the polenta while stirring continuously. Stir quickly to avoid lumps. After adding all the polenta, cook it on low heat while stirring for another 2-5 minutes until it thickens and the grains soften. Once ready, remove the pot from the heat and let the polenta rest, covered, for a few minutes.

Preheat the oven to 180°C (350°F). Grease a medium-sized baking dish with oil or butter. Transfer the cooked polenta into the dish and spread it evenly with a spatula. Spread tomato sauce over the polenta. Finally, add thick slices of mozzarella, making sure to drain it well beforehand.

Place the baking dish in the preheated oven for 20-25 minutes until the dish turns golden brown. Remove the baked polenta from the oven and let it rest in the dish for a few minutes before cutting it into pieces of your desired size.

Advice
Instead of mozzarella, you can also use another cheese that melts well.
