Baked Potatoes with Cheese and Bacon

Ingredients

4 pieces Potatoes, white

80 g Meat, pork, smoked bacon

140 g Sour cream

140 g Cheese, edamame

0.5 teaspoons Salt, table

Thoroughly wash the potatoes under running water and scrub them if necessary. Place them in a large pot and cover with enough cold water to fully submerge them. Place the pot on the stove and cook the potatoes for about 25 minutes.

Once the potatoes are cooked, drain them well and cut them in half lengthwise. Scoop out the insides of the potato halves, leaving about half a centimeter thick wall. Mash the scooped-out potato in a bowl. Cut the bacon slices into small cubes and add them to the bowl with the mashed potato. Also add sour cream and two-thirds of the grated cheese to the bowl. Mix everything well and season with pepper and salt to taste. Fill the hollowed-out potato halves with the mixture.

Preheat the oven to 250 degrees Celsius. Arrange the stuffed potato halves on a baking dish and sprinkle with the remaining cheese. Place the baking dish in the preheated oven for about 15 minutes, until the cheese is golden and crispy.
