Baked Potatoes with Onion and Bacon
Thinly sliced and crispy baked potatoes, cooked together with onion and bacon, can be served as a side dish or enjoyed as a standalone meal with a bowl of salad.

80 g Butter, unsalted

500 g Onion, raw

1 kg Potatoes, white

150 g Meat, pork, smoked bacon

200 g Cheese, Gouda

Preheat the oven to 180 degrees Celsius. Peel the onion, halve it, and slice it thinly. Melt about 2/3 of the butter in a pan. Add the sliced onion and cook it slowly over low heat, stirring occasionally, for 15 minutes until it becomes translucent and soft.

Meanwhile, peel and wash the potatoes, then slice them into approximately 0.5 cm thick slices. Blanch the slices in salted boiling water for 5 minutes. Drain the blanched slices well.

Grease a baking dish with the remaining butter. Arrange a layer of potato slices on the bottom, lightly season with salt and pepper. Follow with a layer of sautéed onion, then sprinkle some grated cheese over it. Place a few slices of bacon on top of the onion, then repeat the process in the same order until all the ingredients are used up. Finish with a layer of potatoes, generously sprinkled with grated cheese.

Place the baking dish in the preheated oven for about 20 minutes. The dish is ready when the potatoes are completely tender (check with a narrow knife) and the cheese has melted and turned golden brown. Serve as a side dish to various meals or as a standalone dish with a bowl of salad.
