Baked Potatoes with Sausage
A delicious and hearty dish that wont take much of your time, as the oven will do most of the work. While baking, youll have more than enough time to prepare a salad that will pair perfectly with the baked dish.

Ingredients

1.2 kg Potatoes, white

1 piece Onion, raw

1 piece Chili peppers, red chili, fresh

150 g Carniolan sausage

2 piece Egg, fresh

150 ml Sweet cream

70 g Cheese, Cheddar

Steps

Thoroughly wash the potatoes under running water and scrub them if necessary. Place them in a large pot and cover with cold water, ensuring the water level is about two fingers above the potatoes. Salt the water, place the pot on the stove, and wait for it to boil. Then reduce the heat and simmer the potatoes, covered, for 20 to 30 minutes or until they are partially cooked (the inside should still be slightly firm). Drain the potatoes and let them cool.

Peel the onion, and wash and clean the bell pepper (remove the stem and seeds). Slice the vegetables. Wash the chili and finely chop it (remove the seeds if desired), and slice the sausage into thin rings.

Preheat the oven to 190 degrees Celsius. Peel the potatoes and slice them into approximately 0.5 cm thick slices. Grease a deep baking dish with oil, then layer the potato slices in it, lightly salting and sprinkling them with a bit of paprika. Add a layer of onion, bell pepper, chili, and sausage. Follow with another layer of potato slices, lightly salting and sprinkling them with paprika. Repeat the process until all ingredients are used, finishing with a layer of potatoes.

In a small bowl, whisk the eggs and mix them with sour cream. Pour the mixture over the potatoes, then sprinkle grated cheese on top. Place the baking dish in the preheated oven for about 45 minutes. The dish is done when the top turns golden brown and the potatoes are completely soft. Serve with a bowl of salad on the side.
