Baked Potatoes with Sausage and Eggs
A hearty oven-baked lunch. If the combination with eggs and spinach doesnt appeal to you, simply omit those ingredients from the recipe. The potatoes with sausage are so flavorful on their own that youll easily finish the entire baking dish.

1 kg Potatoes, white

4 spoon Oil, olive

0.25 teaspoons Salt, table

2 piece Sausage, chorizo

350 g Spinach, raw

Steps

Preheat the oven to 200 degrees Celsius. Peel, clean, and thoroughly wash the potatoes under running water. Cut them into equal-sized pieces. Place the potato pieces in a pot and cover with cold water, ensuring the water is about two fingers above the potatoes. Salt the water and place the pot on the stove. Once it boils, reduce the heat and cook the potatoes for 6 to 8 minutes (just enough time for the potato pieces to remain firm when pierced with a narrow knife).

Pour oil into a large deep baking dish and tilt the dish to evenly spread the oil across the bottom. Place the dish in the preheated oven for 4 minutes to heat the oil. Drain the potatoes well. Remove the dish from the oven and add the drained potatoes. Season with salt and pepper, then shake the dish well to evenly coat the potatoes. Place the dish back in the preheated oven for 15 to 20 minutes (until the potato pieces turn golden brown on the edges).

While the potatoes are baking, prepare the remaining ingredients. Slice the sausage into thin pieces. Soft-boil the eggs. Clean, wash, and thoroughly dry the spinach leaves.

Remove the baking dish with the potatoes from the oven and add the sausage slices. Mix well, then return the dish to the preheated oven for about 10 to 15 minutes, until the sausage slices and potato pieces are crispy and baked. Cool the soft-boiled eggs.

Remove the baking dish from the oven and add the spinach. Mix everything well so the spinach leaves soften slightly. Finally, peel the eggs and cut them into quarters, arranging them over the ingredients in the baking dish. Serve the dish with a large bowl of seasonal salad.

Advice
If you dont have chorizo sausage, you can use kulen or any other spicy sausage.
