Ingredients

1.3 kg Quince

500 g Sugar, white

875 ml Water

3 spoons Honey

10 pieces Spices, cloves, ground

1 stick Spices, cinnamon, ground

2 spoons Juice, lemon
Steps

Wash and dry the quinces. Cut them into quarters, peel, and remove the core, stem, and blossom end. Save the peels and seeds.

Place a pot on the stove with water, sugar, quince peels, and seeds. Stir and cook over medium heat for 10 minutes until the sugar dissolves. Remove from heat, let the liquid cool, then strain it. Reserve the syrup.

Preheat the oven to 180 °C. Insert cloves into the quince pieces, arrange them in a smaller baking dish, and pour over the syrup, honey, and lemon juice. Sprinkle sugar and ground cinnamon over the quinces, and add a cinnamon stick to the dish. Bake the quinces in the preheated oven for 2 hours.
