Baked Ray with Mango

1 kg Fish, fat

2 piece Mango, fresh

150 g Tomato, red

1 piece Bell pepper, red, fresh

7 twig Parsley, fresh

0.5 teaspoons Salt, table

Steps

Rinse the fins well under running water and dry them with a paper towel. Carefully cut them in half to get 4 equal pieces. Wash the mango, peel it, remove the pit, and cut the flesh into small cubes. Wash the cherry tomatoes and cut them in half. Peel the onion, wash it, and slice it into thin rings, then cut the rings in half and separate them into individual layers. Wash the bell pepper, clean it, remove the seeds, and cut it into small cubes.

Mix the mango, bell pepper, tomatoes, and onion in a bowl and arrange them on plates. Clean the parsley, wash it, and shake off the excess water.

Heat a pan well, then pour in the olive oil. When the oil is hot, place the fin pieces in the pan and cook them for 6 to 7 minutes on each side until they are nicely browned. Arrange the baked fins on the plates and lightly season them with salt and pepper.

Wash the lime and cut it into several wedges to garnish the plates. Sprinkle the prepared dish with a few parsley leaves and serve.
