Baked Salmon with Spinach Filling
Although it may not seem so at first glance, the preparation is very quick and simple, so you can prepare delicious salmon even during the week. Once the fillets are in the baking dish, your work is done, and all that remains is baking in the oven. Meanwhile, you can clean up the kitchen and prepare the side dish. This meal is also suitable for the LCHF diet.

Rinse the salmon fillets if necessary and dry them thoroughly with paper towels. Season both sides with pepper and salt.

Prepare the filling. Squeeze the spinach well to remove any excess liquid, then mix it with cream cheese, grated Parmesan, minced garlic, and lemon zest. Gently season the filling with salt and pepper, as we have already seasoned the salmon fillets.

Preheat the oven to 180 degrees Celsius. Use a thin knife to make a deeper incision in the thicker part of the salmon fillets to create a pocket, which you then fill with 1-2 tablespoons of the filling. Place the stuffed fillets in a baking dish. Arrange lemon slices on top, then drizzle the fillets with a little olive oil. Place the baking dish in the preheated oven for 10-15 minutes.
