Baked Salmon with Young Spinach

4 pieces Fish, salmon

pieces Butter, unsalted

2 spoons Oil, olive

1 pod Garlic, fresh

4 pieces Onion, young

1 teaspoon Mustard

500 g Spinach, raw

Steps

Preheat the oven to 180 degrees Celsius. Grease a baking dish with butter. Remove the skin from the salmon fillets, rinse them, and dry them well with paper towels. Lightly salt and pepper both sides, place them in the baking dish, and dot with pieces of butter. Cover the dish with foil and bake in the preheated oven for 15 to 20 minutes, depending on how well-done you prefer the fillets.

Meanwhile, clean the young onion and slice it into rings. Discard the darker parts. Mince the garlic and roughly chop the spinach.

Pour oil into a pan, add the garlic and onion, and sauté for one minute. Add the mustard, squeeze in the lemon juice, add the spinach, season with salt and pepper, and simmer everything together for just two more minutes, then remove the pan from the heat.

Remove the baked fillets from the oven and serve them on plates. Serve the spinach alongside and garnish with a slice of lemon.
