Steps

Place the chicken thighs and drumsticks in a pot, cover with cold water, and add salt. Place on the stove and once it boils, let it cook on medium heat for about 10 minutes.

Remove the cooked chicken pieces from the pot and set them aside on a plate. Reserve the cooking liquid. Season the chicken pieces as desired (use ground pepper, paprika, any dry spices, etc.).

Chop the sauerkraut roughly if needed. If it seems too sour, rinse it quickly under running water. Place the sauerkraut in a pot and add peppercorns, roughly chopped garlic, paprika, bay leaves, and a tablespoon of fat. If desired, you can also add larger pieces of chopped carrots. Pour in the reserved cooking liquid. Mix everything well, then cook the sauerkraut on medium heat until it softens. Taste the sauerkraut towards the end of cooking and add more salt if needed.

Grease a baking dish with a tablespoon of fat (you can also use oil). Add the cooked sauerkraut and spread it evenly in the dish. Optionally, add some dried chili peppers. Bake the sauerkraut in a preheated oven at 200°C (392°F) for about 15 minutes, until the top is slightly browned.

Arrange the chicken pieces over the sauerkraut, with the skin side facing up. Bake in the preheated oven until the meat is golden brown and crispy.
