Baked Sauerkraut with Ground Meat and Rice

Ingredients

1 kg Sauerkraut

200 g Rice, white, long grain, cooked

pieces Oil, vegetable oil, canola

200 g Carniolan sausage

100 g Meat, pork, smoked bacon

2 piece Onion, raw

pieces Garlic, fresh

500 g Meat, beef, ground

4 dl Sour cream

Taste the sauerkraut, and if it seems too sour, rinse it under running water and drain. Cook the rice in salted water. Once cooked, drain it.

Cut the sausage into pieces and fry them on all sides in a pan with a spoonful of oil. Remove the fried pieces from the pan and set them aside on a plate lined with paper towels.

Peel and finely chop the onion. In the same pan used for frying the sausage, crisp up the diced bacon. Leave about 1.5 tablespoons of fat in the pan and discard the rest. Add half of the chopped onion and caramelize it while stirring. Then add the sauerkraut and season it with paprika, pepper, and salt. Mix well, add a little water, cover, and simmer until the sauerkraut softens.

In another pan, heat a little oil and caramelize the other half of the chopped onion. Peel and chop the garlic, then quickly fry it together with the onion. Add the ground meat to the pan and season it with pepper, salt, and paprika. Fry the meat while stirring until it changes color.

Preheat the oven to 180 degrees Celsius. Grease a deep ovenproof dish with the fat that was set aside from the pan. First, add 1/3 of the sauerkraut and spread it evenly over the entire surface. Layer it with half of the cooked rice, ground meat, and sausage pieces. Follow with another layer of sauerkraut, spread with a little sour cream, then layer with the remaining rice, ground meat, and sausage pieces. Cover everything with the remaining sauerkraut, thickly spread with sour cream. Place the dish in the preheated oven for 30 to 40 minutes.

Once the dish is ready, serve it on plates and offer it with homemade bread or a chosen side dish.
