Baked Sea Bream with Potatoes
Fish baked in the oven is simply divine. It requires much less effort than frying in a pan or grilling, and the advantage of baking is also the less intense smell of cooked fish. The fish meat is very juicy and flavorful, and when combined with roasted potatoes and cherry tomatoes, it creates a true gourmet meal.

Steps

Peel and wash the potatoes. Cut them into bite-sized pieces, place them in a pot, and cover with cold water. Add salt and place on the stove. Once the water boils, cook the potatoes for 1 more minute, then remove from heat and drain.

Rinse the fish under running water and dry them thoroughly with paper towels. Season them with salt on the outside and inside.

Preheat the oven to 200 degrees Celsius. Grease a baking dish well with oil. Add the drained potatoes, unpeeled garlic cloves, and halved cherry tomatoes to the dish. Season with salt, pepper, and rosemary, drizzle with oil, and gently mix. Spread the vegetables evenly in the dish.

Make 2-3 slits on the top side of each fish, then place them on top of the ingredients in the baking dish. Insert two lemon slices into the cavity of each fish. Drizzle the fish with olive oil and sprinkle with rosemary.

Place the baking dish in the preheated oven for 30-35 minutes. Bake the fish in the middle of the oven with both top and bottom heating. For the last 10 minutes, you can increase the temperature to 220 degrees Celsius to allow the potatoes and fish skin to crisp up. The fish is done when the eyes turn completely white and the fins can be easily removed from the meat.
