Baked Sea Bream with Zucchini
Sea bream meat is white and high-quality, and it can be prepared in various ways; you can cook it in foil, bake it, grill it… This time, we present it in a home oven version.

4 pieces Fish, white fish

1 piece Small pumpkins

2 piece Lemon, fresh, without shell

1 dl Alcohol, Wine, White

Steps

Clean the fish (scaled and gutted), rinse it well, and dry it with a paper towel. Preheat the oven to 180°C (356°F).

Chop the parsley and garlic cloves. Wash the zucchini, dry it, and cut it into 1 cm thick slices. Squeeze the juice from one lemon, and cut the other lemon in half – slice one half into thin rounds and the other half into quarters.

Grease a baking dish with four tablespoons of olive oil. Arrange the sliced zucchini in the dish, season with pepper and salt, and place the fish on top.

In a bowl, combine the chopped garlic, most of the lemon juice, most of the chopped parsley, about a teaspoon of salt, and half a teaspoon of pepper. Rub this mixture evenly into the belly of each sea bream. Drizzle the remaining lemon juice and sprinkle the remaining parsley over the fish.

Place a sprig of rosemary on each sea bream (or use rosemary in a form that is available to you – but sprinkle it evenly and moderately over the fish). Place lemon slices lengthwise on each fish. Drizzle each fish with two drops of oil.

Place the baking dish in the oven on the middle rack. Bake for about 30 minutes, depending on the size of the fish.

Halfway through baking, pour a deciliter of white wine, a drop of olive oil, and lightly salt (this time over the fish).

Advice
Instead of zucchini, you can use cherry tomatoes (but add them to the fish closer to the end of baking so they don’t turn into a puree). If you don’t like cleaning fish, you can ask the seller to do it at the fish market or store. High-quality olive oils are not suitable for heat treatment.
