Baked Spaetzle with Cheese
Spaetzle are very simple egg noodles, perfect for a quick lunch or dinner during the week. They are usually served as a side dish to meat dishes, but when topped with a mixture of eggs and milk, tossed with cheese, and baked to a golden brown in the oven, they become a delicious standalone dish served with a bowl of salad.

Spätzle dough

250 g Wheat flour, white, multi-purpose

2 teaspoons Oil, vegetable oil, canola

For the spaetzle, in a bowl, mix flour, eggs, salt, and enough water to form a smooth, slightly runny dough. Add oil and mix until bubbles appear in the dough. Cover the dough and let it rest for 30 minutes at room temperature.

Place a pot of salted water on medium heat. While waiting for the water to boil, spread a portion of the spaetzle dough on a wet cutting board and then use a wide knife or scraper to cut thin, long spaetzle into the boiling water. As soon as the spaetzle rise to the surface, remove them with a slotted spoon and transfer to a colander. Rinse them well with cold water and drain. Repeat the process with the remaining dough.

Toss the spaetzle into a greased baking dish. In a bowl, whisk the egg and mix it with milk. Season with salt and ground pepper to taste, then pour the mixture over the spaetzle. Sprinkle grated cheese on top.

Place the baking dish with the spaetzle in the oven preheated to 200 degrees Celsius for 10-15 minutes. Once the cheese has melted and turned golden brown, remove the dish from the oven. Serve the prepared dish on plates with a bowl of salad.
