Baked Squid with Potatoes

Ingredients

1 kg Fish, squid

1 dl Alcohol, Wine, White

2 dl Oil, olive

0.25 bouquet Parsley, fresh
Steps

First, prepare the Trieste sauce. Peel the garlic and finely chop it, then rinse the parsley under running water, shake it dry, and chop it as well. In a small bowl, mix together the olive oil, chopped garlic, and parsley.

Preheat the oven to 200 degrees Celsius. Peel the potatoes, wash them, and cut them into larger pieces (you can also slice them into thicker rounds, quarters, or chunks). Clean the squid tubes and tentacles, wash them, and dry them with paper towels.

Place the sliced potatoes in a baking dish, lightly salt them, and sprinkle with polenta. Mix well and spread them evenly in the dish. Drizzle with two tablespoons of the prepared sauce. Place the squid tubes and tentacles on top of the potatoes. Lightly salt them and drizzle with white wine and a tablespoon of the sauce. Cover the dish and bake in the preheated oven for 20 minutes.

After 20 minutes, uncover the dish and bake for another 10 to 15 minutes, or until the ingredients are nicely browned. Stir the squid and potatoes twice during baking to prevent the squid from becoming tough and to keep it moist. Serve with the remaining Trieste sauce and a bowl of salad.
