Baked Stuffed Mushrooms
A quickly prepared dish that is very hard to mess up. If you dont have soy cream on hand, use cooking cream, and smoked tofu can be replaced with fresh cows cheese in brine or feta. Serve with a bowl of salad, and you have a delicious meal suitable for vegetarians.

12 pieces Mushrooms, mushrooms, fresh

1 spoon Butter, unsalted

4 slice Bread, whole grain

150 g Tofu, hard

80 ml Sweet cream

1 piece Egg, egg yolk, fresh

50 g Cheese, edamame

2 spoons Parsley, fresh

Steps

Clean the mushrooms with a damp cloth, then carefully remove the stems and finely chop them. Cut the crust off the toast slices, then cut them into small pieces. Also cut the tofu into small pieces.

Melt the butter in a pan and sauté the chopped stems. Add the diced tofu and toast and quickly sauté everything together. In a bowl, mix the soy cream and egg yolk. Add the sautéed ingredients, grated cheese, and chopped parsley. Season the mixture with pepper and salt to taste.

Arrange the mushroom caps in a baking dish lined with parchment paper. Stuff them with the prepared mixture and bake for 20 minutes in an oven preheated to 180 degrees Celsius. Serve with a bowl of salad on the side.
