Baked Sweet Potatoes with Cheese and Bacon

2 piece Sweet potato

1 teaspoon Oil, vegetable oil, canola

4 slice Meat, pork, smoked bacon

90 g Cheese, groats

Preheat the oven to 200 degrees Celsius. First, thoroughly wash the potatoes and scrub them if necessary. Dry the tubers, then pierce them in several places with a fork. Place them on a rack and bake in the middle of the oven for 45 to 60 minutes (baking time depends on the size of the tubers). To check if the potatoes are baked, insert a narrow knife into the tuber - if it pierces easily, the potatoes are done.

While the potatoes are baking, fry the diced bacon in a pan with a little oil until crispy. Drain the fried pieces on a paper towel.

Once baked, cut the potatoes in half lengthwise. Remove about 1/3 of the baked flesh from each half and place it in a bowl. Mash it well with a fork and mix with grated cheese and the fried bacon. Season with pepper and salt to taste. Fill the mixture back into the potato halves. Bake the potatoes in the preheated oven for another 5 to 10 minutes - just until the cheese is nicely melted.

Serve the baked sweet potato halves on plates or arrange them on a platter, garnish with parsley leaves, and serve.

Sweet potatoes are not related to regular potatoes, although both originate from Central America. The red sweet potato with sweet orange flesh is great for roasting, baking, mashing, soufflés, and stuffing. The white sweet potato is finer and has a drier white flesh. It can be fried, boiled, or used in mixed meat and vegetable dishes. Instead of sweet potatoes, you can use regular potatoes. You can also add one or two tablespoons of sour cream to the potato mixture.
