Baked Walnut Rolls

Ingredients
Filling

250 g Walnuts

1 dl Milk, whole milk

90 g Sugar, white

1 teaspoon Lemon zest, fresh

Yeast dough

250 ml Milk, whole milk

20 g Yeast, dry

500 g Wheat flour, white, multi-purpose

0.25 pinch Salt, table

1 spoon Sugar, white

1 piece Egg, fresh

30 g Butter, unsalted

First, prepare the yeast mixture: crumble the yeast into approximately 1.5 dl of warm milk. Add sugar and one tablespoon of flour, then mix well to form a smooth mixture. Let the yeast mixture rise in a warm place for 10 minutes.

Mix the remaining milk with the egg and melted butter. Sift the flour into a larger bowl and make a well in the center. Sprinkle salt around the flour, pour the risen yeast mixture into the well, and add the milk, egg, and butter mixture. Mix the ingredients with clean hands or a mixer until they come together to form a rough dough. Then, transfer the dough to a floured surface and knead until it becomes smooth and elastic and no longer sticks to your hands.

Shape the kneaded dough into a ball, place it in a greased bowl, and cover it with a clean cloth. Let the dough rise in a warm place for about 1 hour (until it doubles in volume).

While the dough is rising, prepare the filling. Place the walnuts in a bowl and scald them with milk. Add sugar and spices, then mix well.

Transfer the risen dough to a floured cloth and roll it out to about a finger's thickness. Spread the walnut filling evenly over the dough, then use the cloth to roll it into a long log. Cut the log into 3 to 5 cm pieces.

Line a low baking dish with parchment paper. Arrange the rolls on the dish and brush them with milk on top. Let them rise once more.

Preheat the oven to 170 degrees Celsius. Bake the risen rolls in the preheated oven for 20 minutes. Serve them while still warm or let them cool completely before serving.
