Baked Zucchini Rolls with Herb Cottage Cheese in Tomato Sauce
A light vegetable dish that will definitely be on your summer menu more often. If nothing else, then certainly during the season of homegrown zucchinis, when we often dont know how to use them up. A bowl of salad goes well with it, and if you need something more substantial, we suggest couscous, polenta, or mashed potatoes.

Ingredients

450 g Tomato sauce, without salt

3 spoons Cheese, Parmesan, grated

300 g Cheese, cottage cheese

40 g Cheese, Parmesan, grated

1 piece Egg, fresh

1 piece Egg, egg yolk, fresh

Steps

Wash the zucchinis and dry them with paper towels. Cut off the tops and stem ends, then slice them thinly, about 2 to 5 mm thick, using a knife or a vegetable peeler. You will need about 12 slices.

Arrange the zucchini slices on kitchen towels and lightly salt them. Let them sit for 15 minutes to release water and soften.

Rinse the herbs under running water if necessary and dry them. Finely chop them. In a bowl, mix the cottage cheese, grated Parmesan, chopped herbs, egg, yolk, salt, and ground pepper. Optionally, add finely chopped garlic.

Grease a small baking dish with oil, then pour in half of the sauce and spread it evenly over the bottom of the dish. Dry the zucchini slices well with paper towels. Add a tablespoon of the cottage cheese mixture to each slice and spread it over the entire surface. Roll up the slices and place them in the baking dish.

Pour the remaining tomato sauce over the zucchini rolls, then sprinkle some grated Parmesan on top. Place the dish in the oven preheated to 180°C (350°F) for 25-30 minutes.

Advice
Instead of cottage cheese, you can use ricotta.
