If you have some bananas rolling around in your fridge and youre not sure what to do with them, the best idea is to use them to make a delicious banana bread that you can enjoy for breakfast, a snack, or dinner.

125 g Butter, unsalted

100 g Sugar, brown

115 g Syrup, sweet

Steps

Preheat the oven to 160 degrees Celsius. Sift the flour into a bowl and mix it with cinnamon, baking powder, and baking soda. Peel the banana and slice it into rounds, then mash them well with a fork in a bowl. Grease the baking pan well with butter.

In a larger bowl, use an electric mixer to cream the butter, syrup, and sugar. Add the eggs, mashed banana, and vanilla extract, and mix for about 2 more minutes.

Reduce the mixer speed to the lowest setting and slowly mix in the dry ingredients (flour, baking soda, cinnamon, and baking powder) spoon by spoon.

Pour the batter into the greased baking pan and spread it evenly. Bake the bread in the preheated oven for about 60 minutes. The bread is done when the surface turns golden brown, and a toothpick inserted into the bread comes out clean.

Remove the baked bread from the oven and let it cool in the pan for about 10 minutes. Then, turn it out onto a wire rack and let it cool completely. Once cooled, slice the bread and serve with various spreads or jams.

Advice
The easiest way to soften butter is to take it out of the fridge at least one hour before preparation. If you dont have golden syrup, you can replace it with honey or sugar syrup. Vanilla extract is often used in dessert preparation. You can buy it or make it yourself. Instead of vanilla extract, you can also use vanilla essence.
