Ingredients
-
300 g Wheat flour, white, multi-purpose
-
2 pinch Salt, table
-
2 teaspoons Baking powder
-
200 g Banana, fresh
-
125 ml Milk, skimmed
-
2 piece Egg, fresh
-
60 g Butter, unsalted
-
140 g Sugar, brown
-
1 teaspoon Vanilla, extract, imitation
-
250 g Blueberry, raw
Steps
-
Preheat the oven to 180 degrees Celsius. In a small cup, slowly melt the butter over low heat. Remove the cup from the heat and let the melted butter cool slightly. Grease a deep rectangular baking dish (20 x 10 cm) with butter, then line it with parchment paper. In a bowl, sift the flour and mix it with salt and baking powder.
-
In a larger bowl, mix the mashed banana, sugar, milk, eggs, vanilla extract, and melted butter. Add the dry ingredients to the bowl and mix everything with a spoon or spatula just enough to combine all the ingredients and form a sticky batter. Fold in the blueberries.
-
Pour the batter into the prepared baking dish. Use a spatula to evenly spread the batter in the dish and smooth the top. Bake the banana bread in the preheated oven for 50 to 60 minutes. It is done when the top is golden brown and a toothpick inserted into the bread comes out clean.
-
Let the baked bread cool in the dish for 10 minutes, then transfer it to a wire rack to cool completely. Serve it while still warm or let it cool to room temperature.

Advice
If using frozen blueberries, we need to consider a slightly longer baking time (60 - 70 minutes).
