Ingredients
-
pieces Butter, unsalted
-
150 g Date, fresh or dried
-
120 g Sugar, brown
-
250 ml Water
-
320 g Flour, Whole wheat
-
2.5 teaspoons Baking powder
-
0.5 teaspoons Baking powder
-
0.25 teaspoons Salt, table
-
260 g Banana, fresh
-
60 g Walnuts
Steps
-
Preheat the oven to 180 degrees Celsius. Grease a deep rectangular baking dish (14 x 21 cm) with butter and line it with baking paper. Chop the dates into pieces. In a bowl, mix the flour, baking powder, salt, and baking soda.
-
Place a saucepan on the stove and add water, sugar, and dates. Heat gently over moderate heat, stirring until all the sugar dissolves. Then increase the heat to medium and let the mixture come to a boil. Remove the saucepan from the heat and let the mixture cool slightly.
-
Mix the dry ingredients into the cooled mixture, along with the mashed banana and walnuts. Stir the ingredients with a whisk or spoon until you get a uniform batter, then stop mixing.
-
Spread the batter evenly in the baking dish and smooth the top. Bake in the preheated oven for 40 minutes or until the top is nicely golden brown and a toothpick inserted into the bread comes out clean.
-
Remove the baked bread from the oven and let it cool in the dish for 5 minutes, then transfer it to a wire rack (remove the baking paper). Serve the bread while still warm or let it cool to room temperature.
