Banana Fritters with Raisins
You can also call them banana mice or banana doughnuts. The fritters are pleasantly crispy on the outside, while inside they are soft and fluffy, melting in your mouth. They are best when still warm, served with a cup of hot drink.

250 ml Milk, whole milk

1 spoon Sugar, white

1 spoon Alcohol, Rum

150 g Flour, Wheat, bread flour

2 piece Banana, fresh

50 g Raisins

In a pot, bring to a boil a mixture of milk, salt, sugar, rum, and butter. Lower the temperature slightly and add the sifted flour to the boiling liquid. Stir well with a wooden spoon to achieve a smooth and lump-free mixture. Continue cooking while stirring constantly until you get a large ball of dough that easily separates from the sides of the pot and the spoon.

Transfer the dough to a bowl, wait a few minutes for it to cool slightly, then gradually mix in the eggs one by one using an electric mixer set to low speed. It's important to mix well after each addition to ensure the ingredients combine smoothly, resulting in a soft and shiny dough.

Peel the banana and cut it into pieces, then mix them into the dough along with the raisins.

Heat oil in a larger pot. The oil is ready when small bubbles form around the handle of a wooden spoon dipped into it. Take a soup spoon and dip it into the hot oil for a few seconds. Then use the spoon to scoop the dough and place it into the oil (the dough will easily slide off the oiled spoon). Fry the banana fritters on medium heat, and when they turn golden brown on one side, flip them to fry the other side. Repeat the process until all the dough is used.

Remove the fritters from the oil with a slotted spoon and drain them on paper towels. Serve them warm on a plate or platter, dust with powdered sugar, and enjoy.
