Banana Muffins
Delicious and aromatic muffins with a juicy, creamy center. They are also great because they are made from ripe bananas, which are usually no longer suitable for snacking.

Ingredients
Filling
-
120 g Cheese, creamy
-
30 g Powdered sugar
-
1 teaspoon Vanilla, extract, natural
-
180 g Wheat flour, white, multi-purpose
-
1 teaspoon Baking powder
-
0.5 teaspoons Spices, cinnamon, ground
-
1 pinch Salt, table
-
3 pieces Banana, fresh
-
2 spoons Honey
-
1 teaspoon Vanilla, extract, natural
-
1 piece Egg, fresh
-
80 g Butter, unsalted
Steps
-
Preheat the oven to 190 degrees Celsius. Place paper liners in the muffin tin or grease it with oil.
-
In a bowl, mix the dry ingredients: flour, baking soda, cinnamon, and salt.
-
Peel the bananas and add them to a clean bowl, where you mash them well with a fork. Mix the banana mash with honey, egg, melted butter, and vanilla.
-
Pour the banana mixture into the bowl with the dry ingredients and quickly mix with a spatula until the ingredients combine into a uniform batter.
-
Fill the muffin liners or tin halfway with the prepared batter. In a clean bowl, smoothly mix cream cheese with powdered sugar and vanilla. Place a dollop of the cream filling in the center of the banana batter. Top with the remaining banana batter, filling the liners or tin to three-quarters full.
-
Bake the muffins in the preheated oven for 18 to 20 minutes. They are done when a toothpick inserted into the center comes out clean.
-
Let the baked muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Decorate as desired before serving.
