Banana Muffins with White Chocolate
You can enjoy banana muffins all year round. If youre not a big fan of white chocolate, you can easily substitute it with milk or dark chocolate.

220 g Flour, Wheat, bread flour

80 g Sugar, white

1 teaspoon Baking powder

3 pieces Banana, fresh

110 g Butter, unsalted

2 piece Egg, fresh

1 teaspoon Vanilla, extract, imitation

80 g chocolate, dark
Steps

Preheat the oven to 180 degrees Celsius. Line the muffin tin with paper liners or lightly grease them with oil (or butter).

In a bowl, sift the flour and baking powder. Add sugar, salt, and baking soda, and mix the ingredients well. Optionally, add a pinch or two of ground cinnamon.

Peel the bananas and slice them into rounds. Place them in a bowl and mash them with a fork into a coarse puree. Mix in the eggs, melted butter, and vanilla extract. Add the banana mixture to the bowl with the dry ingredients and stir with a spoon or spatula just enough to moisten and combine the ingredients. Then, fold in the chopped chocolate.

Fill the paper liners or muffin tin cavities with the prepared batter up to 2/3 full. Bake the muffins in the preheated oven for 20 to 25 minutes. To check if they are done, insert a toothpick into one muffin - if it comes out clean, the muffins are ready.

Remove the baked muffins from the oven and let them rest for about 5 minutes. Then, transfer them from the tin to a wire rack. Serve while still slightly warm or let them cool to room temperature before serving.
