Banana Oat Pancakes

130 g Oat bran, raw

Steps

Peel the bananas and add them to a blender along with the oats, plant-based milk, eggs, cinnamon, a pinch of salt, and baking powder. Blend the ingredients until you get a smooth but thick batter.

Heat a pan well for cooking the pancakes. Add a piece of coconut oil, wait for it to melt, then tilt the pan left and right to evenly coat it.

Spoon two or three dollops of batter into the greased pan (depending on the size of the pan) and shape them into approximately 10 cm wide pancakes using the back of the spoon (use 1-2 tablespoons of batter for each pancake). When bubbles start to form on the surface, flip the pancakes with a spatula and cook the other side.

Remove the cooked pancakes from the pan and keep them warm on a heated plate covered with a lid. Wipe the pan with a paper towel and grease it again with a piece of coconut oil before cooking the next batch. Repeat the process until all the batter is used.

When serving, place three pancakes on a plate. Drizzle with a little honey or maple syrup if desired, and top with fruit and nuts. A great addition is also coconut or Greek yogurt.
