Banana Pancakes with Blueberries

150 g Pearl barley

2 piece Banana, fresh

1 piece Egg, fresh

150 ml Milk, whole milk

100 g Blueberry, raw

Steps

In a bowl, sift the flour and add cinnamon, baking powder, and baking soda. Mix the ingredients and make a well in the center.

In another bowl, mash the peeled bananas with a fork and mix them with the egg and milk. Pour the mixture into the well and quickly stir everything together with a whisk to form a uniform batter, then fold in the blueberries.

Place a large frying pan for pancakes on the stove and heat it well. Grease it with butter, oil, or coconut fat, then spoon six heaped portions of the prepared batter into the pan. Flatten the mounds slightly with the back of the spoon to form smaller, slightly thicker pancakes.

When the pancakes are golden brown on the bottom, flip them with a spatula and cook the other side. Place the cooked pancakes on a plate and repeat the process to cook all 12 pancakes.

Stack the cooked pancakes on plates, drizzle them with agave syrup or honey, top with fresh fruit, and serve with plain, Greek, or coconut yogurt.
