Banana Pancakes Without Flour and Milk
To prepare these pancakes, you essentially need only three ingredients. You can even use just two if you decide to skip the baking powder. Since the pancakes contain no milk or flour, they are an excellent choice for those allergic to gluten and dairy products.

Peel the bananas and slice them into rounds, then place them in a bowl. Mash the banana slices well with a fork. In another bowl, whisk the eggs with a hand whisk. Add the mashed bananas and baking powder, then mix everything well to form a uniform mixture.

Place a pan on the stove and pour in coconut oil. Tilt the pan to spread the oil evenly, then pour any excess back into a container. Spoon dollops of the batter onto the heated pan and flatten them with the back of the spoon. Once the edges of the pancakes brown and the bottom is cooked, carefully flip them and cook the other side. Transfer the cooked pancakes to a warm plate. Re-grease the pan with oil and repeat the process until all the batter is used.

Serve the prepared pancakes on plates. Peel the third banana and slice it into rounds. Drizzle the pancakes with honey or maple syrup, top with banana slices, and serve.
